Heat retention is the whole game, and it lives in details you can't see once the oven is finished. We build on an insulated hearth so the cooking floor doesn't bleed heat downward into the stand, lay the dome in refractory brick or set a modular refractory kit with the arch and entry proportioned for proper airflow, and insulate over the dome so the mass holds temperature for hours after the fire dies down. A cooking floor laid in cordierite or firebrick gives the even, retained-heat surface a real pizza needs. Skimp on the insulation layer — the corner most budget builds cut — and the oven never reaches temperature or holds it.

Draft and the flue make the oven usable instead of smoky. A pizza oven vents at the front of the dome, and the flue collar, anchor plate, and short chimney have to be set so the oven pulls smoke up and out rather than into the cook's face. We set the front-vent flue and a properly sized chimney with a spark-arrestor cap, so the oven drafts cleanly and meets ember-screen code.

Because these ovens live outdoors and run extremely hot, the build handles both weather and thermal cycling: freeze-thaw-rated exterior materials and refractory components rated for the firing temperatures, with the entry, landing, and surround detailed as a finished feature. Where a dome later develops firing cracks (normal in heavy use), we offer crack-stitching and high-temp refractory repointing to restore heat retention — long-term support a premium brand provides and a kit retailer doesn't.
